Sausage King

Australia’s largest high-profile Sausage King Competition run by the Australian Meat Industry Council (AMIC) has heats from February to July for the Queensland branch, with the state finals being run in conjunction with the RQFWS at the Brisbane Showgrounds.

This competition showcases the humble snag in an entirely new light and enables independent, local butchers to enter their unique sausage recipes in any or all of the six categories; Traditional Australian, Traditional Australian Pork, Poultry, Australian Lamb/Open Class, Continental, and Gourmet/Open Class. Competition is fierce with the number of entries increasing each year and all of them made with a fantastic variety of local, fresh products.

New and innovative original combinations show up at each heat with butchers closely guarding their prized recipes.

Ham, Bacon & Smallgoods

The coveted Ham, Bacon & Smallgoods Competition run by AMIC at the Brisbane Showgrounds, is held with a panel of industry judges diligently working their way through seven categories of numerous entries. The categories are: Boneless Leg Ham, Leg Ham on the Bone, Bacon Rashers (Full middle), Cooked Corned Silverside, Pre-Cooked Sausage, Cold Meat Platter Presentation and Dried Meat (Beef Jerky/Biltong).
